Tom Collins first appeared in 1876 in the second edition of Jerry Thomas’ “The Bar-Tender’s Guide”. It is presented as a family of drinks in which the customer had the choice of spirits: Tom Collins Brandy, Gin and Whiskey.

  • 50ml Old Tom Gin
  • 30ml Fresh Lime Juice
  • 20ml Sugar Syrup
  • Soda


Place all the ingredients in the shaker except the soda and shake vigorously for 10-12 seconds. Strain into a glass with ice and fill with soda.
