apros Rose Vermouth

We are into a period where the rise of classic cocktails has brought to the fore and highlighted products that for years, we may have considered outdated. We could include vermouths in this category. Times change, as do the products, which are being modernized by occupying prominent positions on the bars’ shelves. In this Easter Egg we will talk about a vermouth from Germany and more specifically from the Black Forest, apros Rose Vermouth.

Matthias Sasse loves his birthplace, his life and his work as an entrepreneur and so he wanted to create a vermouth that features and highlights the flavours of Baden. Together with two more of his friends, Achim Berger, restaurateur and bar lover and the oenologist and owner of the Kaiserstuhl winery, Johannes von Gleichenstein, they created apros, which in Latin “apros” means wild boar.

Each of the three have their own responsibilities. Johannes was responsible for the selection of the right grape variety choosing the excellent quality wines to be used. Achim is the one who has the taste concept in mind, but also the goal of keeping the clear taste in the final product. Frank Küchlin, a specialist in the production of spirits, is added to the equation, while Hansjörg Weis and Alexander Hess from the Elz Valley Distillery in the Black Forest, two professionals in the production of high-quality vermouth, completed the team. All of them take a highly personalized approach to the production of apros, which includes not only their herbal and spicy ingredients but also the incorporation of fresh Mediterranean flavors that evoke the culture of Baden.

With “less is more” in mind, the three different varieties of apros Vermouth were created. We had the opportunity to taste aros Vermouth Rosé. Its simple, transparent bottle with a white embossed label bearing geometric designs, which could be said to remind us of mountain tops or trees in a more minimalist approach to the Black Forest. The apros Vermouth Rosé is based on Pinot Noir and Pinot Gris from the Kaiserstuhl region in southern Germany, in the heart of the Black Forest, which are processed and infused with herbs and spices.

Its colour is cloudy orange while on the nose we can distinguish sweet aromas of flowers, currant, plum and other red fruits and citruses, which are mixed with notes of herbs, such as liquorice and eucalyptus. In the mouth, it has a medium body with elements of rosemary, pink pepper, orange peel and angelica root. A composition that creates a balanced sweet and sour taste with a relatively short aftertaste.

Smooth and pleasant to drink, we can enjoy it straight, with ice, in a refreshing summer spritz with a special and perhaps herbal tonic, while it would be pleasant in a blend for a Negroni or Manhattan, while it would easily stand alone in an Americano or a Vermouth & Tonic.
